The sanitary sewer system infrastructure throughout the United
States is strangling on grease. America’s output of grease and oil
as kitchen waste has rocketed to over three billion pounds a year
(Source: Wall Street Journal, June 4, 2001). In commercial kitchens,
this material is generated from the dishwashers, rinse sinks, and
floor drains. Unless collected and disposed of, this liquid waste,
called either “FOG” (Fats, Oils, and Grease) or “Brown Grease,”
escapes into the sewer systems. This material has such an impact
that three quarters of the sewer systems in the United States work
at half capacity due to grease buildup in the lines. Ultimately it
can end up in treatment plants choking the processing capacity, as
it is toxic to the organisms at the plant that treat the wastewater.
